Great Bread.
1. Whisk the water and yeast together for the biga in a glass or metal bowl.Add 1 cup flour and whisk until smooth. Cover with plastic wrap and chillovernight (but no longer than 15 hours)
2. Before preparing the dough, bring the biga to room temperature, settingit on the counter for 1 hour. It will be thick and foamy.
3. Combine the biga, 2 cups flour, 2 tsp salt and sugar for the dough in thebowl of a stand mixer fitted with a dough hook. Mix on low speed for 1minute or until incorporated.
4. Increase speed to med-low and mix until smooth, 5 minutes. If the doughis not wet, sticky, and falling from the hoot, add water, 2 tsp. at a time,until it is.
5. Transfer dough to a bowl coated with oil. Pull the dough up and overitself until its top is smooth, then coat with oil spray. Cover withplastic wrap and let rise in a warm , draft-free place until doubled in size1 1/2-2 hours
6. Drizzle 3 Tbs. olive oil in a 9 x 13 baking pan, then smear it to coatusing your hands. Press dough evenly in the pan, cover with plastic, andlet rise until 1" thick, about 1 hour. Preheat oven to 400.
7. Top dough with rosemary. Coat fingers with oil, then press them into thedough to "dimple" not too many or the dough will collapse.
8. Drizzle dough with 4 Tbs. oil and sprinkle with coarse salt. Bake untilthe top is golden and sides pull away from the pan, 25-30 minutes.
9. Transfer the bread to a rack and cool for 5 minutes before slicing. Focaccia is bes served the same day it's baked.
