Preheat oven to 350°
Beat 2 egg whites until foamy, slowly add 2/3 cup sugar
Beat until stiff peaks form
Add ½ teaspoon vanilla
Add 1 cup chopped pecans
Add 1 cup chocolate chips (semi sweet or dark chocolate)
Cover cookie sheet with parchment paper or wax paper
Drop by teaspoon onto cookie shet, place in oven and then turn oven off. DO NOT OPEN OVEN UNTIL
THE NEXT MORNING
If you make cookies at night, don’t remove cookies from cold oven until the next morning.
Allow six to seven hours if done during daytime.
