The best pancakes ever
Sift or whisk together dry ingredients.
Add and quickly mix in milk and egg yolks. Don't overmix.
Stir in melted butter and vanilla.
Stiffly beat the egg whites. Fold into batter. A balloon whisk works well for folding.
Pour batter from tip of spoon onto hot griddle. (How hot? A drop of water bounces off and sputters.)
Turn only once when 1st side is brown (2-3 minutes - bubbles will have formed, but not popped.)
Serve with butter and maple syrup.
