Saute the bacon until the fat is rendered.
Add onions and saute until soft and translucent.
Add the black beans and half the chicken stock.
Bring to a simmer and mash the beans with the back end of a spoon or a potato masher.
Mash the beans to desired consistency and add additional chicken stock if they become dry.
Season with cumin, salt and pepper and sprinkle cheese on top for service.
