Beat the eggs with a whisk. Then add milk, tomatoes, mushrooms, green/red
bell pepper, garlic & onions. I also had fresh basil, but forgot to include them. A
couple of leaves is enough. Spray a non-stick skillet (medium size) with Pam
and pour the egg mixture. (Pre-heat oven to 350 degrees). Sprinkle Feta
cheese throughout the skillet. The cheese will sink below the egg mixture. I
used most of the 6 onces. Put skillet on a low to medium flame. Cook egg
mixture until the edges separate from skillet and the mixture starts to gel.
When mixture starts to gel almost at the center, put skillet in oven and
continue cooking for 20 to 30 minutes. Test if it''s done by pressing the
center of the Fritata. If it is firm, it is done. Remove from oven and serve
Remember not to touch the handle of the skillet...it will be very hot.
