Saute onions and garlic; push to the side
Add ground meat and let it brown until all the fat has evaporated (12-20 turkey; more for beef) or when the meat sticks slightly to the bottom; push to side
Add tomato paste and let it caramelize, slightly burn on bottom of pan.
Stir everything together.
Push meat mixture to side and add the chipotle pepper in adobo and let it caramelize (about 1 min) then stir into mixture.
Add powdered spice (salt throughout)
Beer/chicken stock (let all liquid evaporate)
Add tomatoes to a boil
