Fry onions, add chicken cubes and stir fry until golden. Add lots of water and season with cardamom, black pepper, salt and chicken stock spices. Cook for 30 mins assuming pressure cooker.
Once chicken is cooked, heat ghee in pan until fragrant and sauté freekeh
Add water from chicken on top of freekeh until if barely covers and leave on medium high heat until water is reduced and freekeh is cooked
Once water is reduced, heat some ghee in saucepan until smoky and add on top of freekeh
Cover freekeh in thick towel until serving time
Serve with garlic cucumber yoghurt and drizzle with fried pine nuts and almonds
