preheat oven to 350. Line a 13x9 with foil, extending the foil over edges of pan. coat foil with nonstick cooking spray. in a bowl, whisk together the next 5 ingredients (through pepper). pour mixture into prepared pan. bake 8-10 minutes or until set. Using foil, lift out egg mixture and cut into 6 rectangles.
meanwhile lightly toast bread. fill sandwich with egg, Canadien bacon and cheese. wrap each sandwich in plastic wrap and place each in a resealable sandwich bag. seal and. freeze up to a month.
to prepare: remove one or more sandwiches from freezer. remove plastic wrap and wrap in a paper towel. microwave 1 1/2 - 2 minutes, turning once.
wrap in foil to keep warm if heading out the door!
