Warm the water to 110 degrees in microwave. Add water into a stand mixing bowl and add Yeast, Sugar, & Salt. Let sit about 10 minutes until it bubbles & foams.
Using a stand mixer kneed the dough for about 8 minutes.
Cover the dough in a greased bowl and let rise for about 30-60 minutes, or until doubled in size.
On a lightly floured surface roll into a 16x12 " rectangle and cut in half. Creating two rectangles. Roll up each half tightly to taper the ends. Place on a greased cookie sheet and make diagonal slashes across each loaf every 2 inches. Cover and let rise about 30-45 minutes or until doubled in size.
Preheat oven to 375. Mix egg yolk and 1 tablespoon of water. Brush over the entire top of the loaves. Bake for 20-25 minutes or until golden brown.
