Soak peas in at least 2 quarts cold water over night.
Drain peas and put in a large (3 quart) pot with stock, onion and garlic. Bring to a boil for about 5 minutes, then reduce the heat to medium low. Add ham bone and cook for 2 hours. Remove bone and scrape off any remaining meat; add to pea mixture. Season to taste and serve hot.
Add a little vegetable oil to boiling peas to prevent foaming and boiling over. This recipe works well cooked in a slow cooker for 6-8 hours.
