Melt chocolate in double broiler with water, sugar, and vanilla. Beat the egg yolks. Add them one by one to chocolate mix (chocolate should be cool to the touch.) Add a dash of salt to egg whites. Beat in a cool glass bowl. Add whites to chocolate mixture slowly and fold in.
