Add olive oil to Dutch oven over medium heat
Slice onions in half, then cut halves vertically into thin slices
Add onions to Dutch oven and cook, stirring gently, until the onions start to soften
Season with salt and pepper, and reduce heat to low
Continue to cook onions, stirring every few minutes
If they start to stick, add a splash of chicken broth or water, and continue to stir
Cook until a deep golden brown (or less, they still taste good!), approx 1 hour
Near end of cooking, add fresh thyme to onions and continue to cook
Butter one side of each slice of bread
Place 2 slices of bread in nonstick skillet over medium-low heat
Top each bread slice with 1/4 cup caramelized onions and 1/4 cup cheese, and another bread slice
Heat until bread is lightly toasted, onions are heated through and cheese begins to melt
Flip each sandwich over and heat until cheese is melted and bread is toasted
