Preheat grill and broiler. In bowl, combine garlic, grill seasoning, hot sauce, worchestershire souce, and vinegar. Whisk in 3 T olive oil. Marinade steak 10 minutes.
Over medium high heat, saute oil, onions, thyme, salt, and pepper 8 minutes. Add stock and cook 3 minutes until almost cooked away. Remove from heat.
Remove steak from amrinade and pat dry. Grill 7 minutes each side. Rest 5 minutes then thinly slice on an angle against the grain.
Split crossants and arrange on baking sheet, cut sides up. Divide onion mix, top with steak and then more onions. Place cheese on top and melt in broiler 2 minutes. Close sandwiches and serve immmediately.
