French Onion Soup
Melt butter and oil in pan. Add sliced onions and coat with butter. Cover pan and cook onions over low heat for 15-20 minutes, until tender and translucent. Uncover pan and raise heat to moderate high an stir in salt and sugar. Cook about 30 minutes, stirring frequently until onions are golden brown. Lower heat and stir in flour. Cook slowly, stir constantly for about 2 minutes. Remove from heat. Pour a cup of hot broth into onions. Pour into pot with rest of broth, wine, bay leaf and sate. Simmer for 30-40 minutes.
Cut bread and top with oil. Bake at 325 for 20 minutes until brown. Put in crock with cheese and soup. Bake at 350 until cheese browns.
