in a large pot, melt butter over medium heat. Add the thinly sliced onions, stirring well in the butter. Keep on Medium heat until they start to release some liquid & soften.
Sprinkle with sugar, salt & pepper, to encourage the caramelization process. Once the onions start to wilt, reduce heat to medium low, leave them be for a bit so that they get a little brown. Stir, then ignore for a bit. Do this until the onions are a nice golden brown, about 40 - 50 minutes.
Stir in garlic, then cook for a few minutes. Stir in Dijon, then the white wine. Bring to a boil & bring up any brown bits on the bottom of the pan. Cook for about 10 minutes.
Stir in broth & soy sauce. Bring to a simmer, reduce heat and let simmer for 15 minutes. Season with thyme, more salt & pepper if needed.
Scoop into oven proof bowls, top with bread & a good sprinkling of cheese. Place under preheated broiler & leave there until golden & gorgeous. If you don't have oven proof bowls, just place cheese on bread, bake until golden & place on top of hot soup.
