Cook onion in butter until tender, but not brown.
Combine beef broth with one can of water, sherry, Worcestershire sauce and pepper. Add onions and simmer for 30 minutes. (simmering can be skipped, but it improves the flavor)
Pour soup into ovenproof bowls. Top with croutons and cheese.
Broil (low setting if your oven has the option) until lightly browned.
