Suggest a better descriptionPeel and very finely slice a kilo of onions. Heat 50 g of butter and 1 tablespoon of olive oil in a large pan and add the onions. Cook very gently, tossing and stirring regularly, without allowing the onions to catch on the pan or turn brown. After about half an hour, they should be golden and completely tender. Remove from the heat and season with a pinch of salt, a little grated nutmeg and a few twists of black pepper.
With a fork, beat together three eggs yolks and 200 mls of double cream. Finely grate about 100 g of gruyere cheese.
In a mixing bowl, combine the onions with the cheese in the egg and cream mixture. Spread evenly into the pre-baked pastry case and put into a fairly hot oven (190°C) for about half an hour until the filling is lightly puffed and golden, serve piping hot from the oven
