A great tasting favorite with our family, we love them with, pudding, jams and jellies and whipped cream.
Sift together the dry ingredients
Make a well and pour in the liquid ingredients
Combine with a few swift strokes. Ignore the lumps, they will take care of themselves.
Heat a skillet (size of skillet is up to you - how big do you like the pancakes) and grease with a few drops of oil or spray.
Add a small quantity of batter. Tip and rotate the skillet so that the batter covers the bottom. Cook over moderate heat and flip when brown (about 1 minute)
Spread with your choice of fruit, jelly, jam, pudding, or whatever you like. Roll it up like a tortilla and cover with powdered sugar or whipped cream. Delicious!
