Marinate chicken in Buttermilk and ranch seasoning overnight.
Dredge chicken in flour and fry until golden brown. Move chicken to 350 oven and cook until internal temp reaches 165. Allow chicken to rest 5 min before serving.
Bring cream to a boil in large saucepan and reduce to simmer, add mustard and old bay seasoning. Stir in scallions, tomato, parsley and crab. Add black pepper if desired. Cook to thicken. Immediately pour over chicken and serve.
