Creamiest scrambled eggs you will ever have!
1) Melt the oil in a small saucepan over medium-low heat.
2) In a large bowl, combine the eggs, diced tomato, if using, chives, salt, and pepper.
3) Pour the egg mixture into the saucepan and cook for a few minutes, whisking constantly.
4) When the eggs reach the texture you like, remove from the heat and add the creme fraiche, mixing well. Add the gravlax and stir gently. Serve immediately.
