Very easy to assemble appetizer that you can easily make ahead of time, freeze, and heat when you need it.
Slice the French bread into 1/2 inch slices, set aside.
Cube the chicken fillet into very small pieces.
In a frying pan (with a lid) over medium heat, melt the butter. Add the chicken, slt, garlic, green chillies, mayonnaise, and lemon juice. Stir and cover, cooking over medium low heat, until chicken is opaque. Remove lid and continue to cook over medium heat until the chicken is fairly dry. Allow to cool.
Mix the butter, salt, and garlic together. Lay out all the French bread slices on a baking trays or plates, covered with wax paper, that will fit in your freezer.
Spread butter mixture thinly over the top of all the slices. Sprinkle a little cheese on top of each slice, then top with chicken and diced bell pepper. Freeze for about an hour, then remove from the plates/trays and place into freezer bags or freezer suitable storage containers.
When ready to serve, remove the desired amount and bake at 175 C/350 F until the cheese is bubbly, about 10 minutes.
