Maple flavored cupcakes with bacon cream cheese, could be dessert for breakfast!
Preheat oven to 350?
Mix flour, baking powder, cinnamon and salt in a small bowl.
In a large bowl, wisk together butter, sugar and eggs until smooth. Make sure the butter is cool or the eggs with scramble.
Whisk in maple extract and then alternate between flour and milk. Make three additions of flour and two of milk, whisk until smooth.
Scoop batter into cupcake tins. Bake for 20-25 minutes until golden and tops spring back when touched. You can also use small muffin tins. Bake 12-14 minutes for those. Makes 48.
Cool on a rack for 10 minutes then remove from pans and cool completely.
Frosting:
In a large mixing bowl, beat cream cheese and butter. Add sugar a little at a time on low until well incorporated. Add cinnamon and increast speed to medium until fluffy.
With a spatula, fold in bacon crumbs. You can omit this and just put the bacon chunks as a garnish.
Frost cupcakes and garnish with large chunks of the 6 slices of bacon.
