This recipe is from the Texas Highways website. The taste and texture reminds me of fruitcake.
Combine sugar, oil, and eggs; beat well. Stir together flour, salt, and soda; add to egg mixture along with hot water. Mix well. Add apples, vanilla, and 1 cup chopped pecans and mix well. Pour into bundt or tube pan sprayed with non-stick cooking spray. Combine brown sugar and remaining pecans and sprinkle on top of the cake. Bake at 325 for 50 to 60 minutes. Cool in pan 10 minutes, remove from pan and let cool completely on a wire rack.
