Cream the eggs and 2 cups sugar in a mixing bowl. Add the oil and beat well. Combine the flour, salt, baking soda, and cinnamon in a bowl and mix well. Add to the cream mixture and beat well. Stir in vanilla, nuts, and apples. Pour into a greased 9X13 inch cake pan. Bake at 350 for 55 minutes. Combine the orange juice, 1/2 cup sugar, and butter in a saucepan. Bring to a boil, stirring frequently. Stir in the rum. Pierce some holes in the top of the hot cake with a wooden toothpick and pour the topping over the hot cake.
