Mandarin oranges - which are actually tangerines - are high in vitamin C and have a decent amount of beta carotene as well. Excellent dessert for company.
1. In a small saucepan, sprinkle the gelatin over 1/2 cup of the orange juice. Warm the mixture over very low heat, stirring just until the gelatin is dissolved, then remove from the heat.
2. Let the gelatin mixture cool to lukewarm, then combine with the remaining juice, the orange zest and vanilla.
3. In parfait glasses, spoon alternating layers of mandarin oranges, orange gelatin and strawberries. Repeat the layering, ending with strawberies on top.
