This recipe came from my grandmother Mama's recipe box. It's somewhat like a cobbler but with more of a cake topping than bisquit. Very yummy.
Preheat oven to 425 Degrees
Slice Peaches. Toss with lemon juice to keep peaches from turning brown. Combine Sugar, flour, salt and Cinnamon (first in list) with peaches. Turn into 8x8x2 pan. Dot with Butter. Sift together Flour, sugar, baking powder and salt (second group). Mix Milk, egg and shortening with dry ingredients. Mix until just blended, do no overmix. Spread evenly over peaches.
Bake for 30 minutes or until cake has browned, and is cooked all the way to peaches. Cut into squares and flip over to serve.
Notes: I added lemon juice which both helps the peaches from turning brown and provides a bit of acid to help balance. I replaced the shortening with melted butter and it worked great.
