Line a sieve with cheesecloth and place over a bowl.
Bring milk, cream, and salt to a simmer stirring occasionally.
Add lemon juice and vinegar.
Cook stirring constantly until begins to curdle (about a minute).
Remove from the heat, let rest for a couple of minutes.
Pour through the cheesecloth, let sit and drain for 30 minutes.
Store in airtight container for up to 5 days.
