Funny how soy lecithin creeps into so many things. Make your own salsa and it's soy free.
Boil 2 cups water. Put onion & garlic in strainer, pour boiling water over them. Drain and discard water.
Let onions cool, combine with tomatoes, peppers, cilantro, lime juice and add salt & pepper to taste.
Cover and refrigerate 2 to 4 hours.
