Chop tomatoes and onions. Place in a large bowl. Add crushed pineapple to the tomatoes and onions. , Combine garlic, carrots, and peppers a small food processor. Process to a fine chop. Remove leaves from cilantro and add to food processor. Pulse to desired texture. Add food processor contents to tomato/onion mixture. Add lime juice and red wine vinegar. Stir ingredients. Eat with tortilla chips, on tacos, or even chili. Delicioso!
