Heat 3 tablespoons of oil in large heavy skillet over medium heat.
Rinse and drain fillets.
Place corn meal in shallow pan.
Sprinkle salt and pepper on both side of fillets.
Coat with corn meal mix.
Fry 2 fillets at a time about 3 to 4 minutes per side or until flaky and golden brown.
Drain on paper towels.
Add remaining 2 tablespoons of oil to skillet and fry remaining 2 fillets.
