Cut fish into desired sizes, but try to be consistent so they cook evenly. Dry fish in paper towels.
Combine batter ingredients in a bowl for dipping. Whisk well.
Place cornstarch on a plate or wide bowl.
Heat oil to 375 F.
Thoroughly dust each piece of fish, dip it in batter and ensure it is well covered and drop in oil. Do not set into basket, as it will adhere to it.
Cook 2 minutes and check color. Flip if desired and cook til brown-ness desired. Small pieces only take 2 minutes.
Dry on paper towels and serve immediately. If placed in oven to keep warm, crust will soften quickly.
