Suggest a better descriptionUsing kitchen scissors, trim the darker green parts of the firs and wash in cold water to get rid of any sand or grit. Using a salad spinner, dry the lettuce well and chill in the refrigerator if you have time. Fill a medium sized Dutch oven or a heavy pot with water. Add white vinegar and a pinch or two of salt and bring to a boil. Reduce the heat until it is barely bubbling. Crack each egg in a separate small bowl and carefully slide the egg into water. Cook eggs for 1 min and 30 sec stirring softly to move the white of the egg over the yolk. Remove eggs slowly with a slotted spoon and immediately add them into an ice bath (a large bowl with ice cubes and water). This will stop them from overcooking. Set aside. Place the bacon pieces and sliced shallots into a skillet and cook gently over medium high heat until the bacon is browned and crisp. Remove all with a slotted spoon and cover with paper towels to soak up the excess grease. Set aside. In a steel mixing bowl, whisk together mustard, red wine vinegar, the honey, the lemon juice, the all purpose spice, salt and pepper. Whisk well to incorporate. Then, in a slow steady stream, add the olive oil. Whisk, non-stop, until all ingredients meld together as a dressing. Once the dressing is complete, you can put it into a saucepan to warm or simply warm the dressing in a microwave. You don't want the dressing mad hot or it will wilt the leaves of the salad. Place dried firs lettuce on individual plates. Sprinkle over some of the bacon or pancetta bits. Pour 2 tbs of the warm dressing (just enough to barely coat the lettuce) over the firs. Then place your poached egg, one at a time, back into the warm water for no more than 20 sec to re-heat. Take out egg with slotted spoon and dry off the bottom gently with a paper towel. Place poached egg on top of the salad. Garnish with fresh chives.
