You can cut bacon into neat pieces if you buy slab bacon, but if you buy strips you may find they slip too readily to slice tidily. Simplify matters by cutting them with scissors and letting them fall directly into the skillet. Add sliced tomato and bell peppers for a satisfying breakfast!
1. Heat a 10-inch nonstick ovenproof skillet over medium-high heat. Add bacon and saut? until it begins to crisp, 3 to 5 minutes. Add onion and saut? until soft, about 5 minutes.
2. Whisk eggs, water, salt and pepper in a medium bowl. Add egg mixture and cheese to skillet; cook until eggs are set on bottom but top remains slightly runny, about 5 minutes.
3. Heat broiler to high. Transfer skillet to oven and broil until eggs are set and golden, about 2 minutes. Cut into wedges and serve.
