Whisk eggs and mustard.
Heat fat in oven proof skillet over medium heat.
Cook bacon and onion until onion is golden.
Add spinach, cook a couple of minutes until wilted, pour egg mixture into skillet, cook until a little hard. Once it is set around the edges but still runny in the center transfer the skillet to the oven and bake for 30 minutes or until golden.
A knife in the center coming out clean means it is done.
