2. In a bowl mix all the eggs with the vegetables and add salt and pepper.
3. Line a baking tin with parchment and pour in the eggy mixture. Cook for about 30 minutes at 180 degrees and for the final 5 minutes top with some grated cheese and pop back in the oven to melt.
You can add any vegetable you want to this if you have some to use up.
