Pre heat oven to 425
Mix eggs and dairy (can use heavy cream, sour cream, whole milk) and salt and some of chopped herbs, and cheese.
Chop veggies and cook in cast pan with some butter and evoo (garlic, sweet peppers, jalepanos, onions, broccoli, tomatoes/zucchini/mozzarella/basil, spinach/artichoke/feta,

Pour egg mixture in pan with cooked veggies and mix around.
Cook for a few minutes until edges set just a bit
Put pan in oven for 15 min or so - until cooked! Don’t over cook - eggs will set a bit after take out.
Top with some of the fresh chopped herbs and a bit of the cheese used.
