Drawing from mademan.com this is my own creation
-prep by cutting up onion, shallot, and tomato. Keep tomato seperate
-put a pan on med-hogh heat, add in 1 tablespoon olive oil
-cook 3 strips of bacon
-once done, cut into smaller pieces, say 8 per strip
-crack 4 eggs into a bowl and whisk them up
-turn on oven, heat to 350 f
-put a differnet pan on medium heat (or clean the bacon one)
-add 1 tablespoon of olive oil
-add in shallot and onion.
-cook it up for 1 min
-add in the eggs and bacon
-move everything around slowly until eggs start to coagulate (probably about 2 mins)
-flip frittata
-sprinkle ricotta ontop
-place whole pan in oven for 2 mins
-slide frittata onto plate
-put tomato ontop
-add 1/2 tablespoon of olive oil ontop
