Uses leftover cheese
Remove rinds and moldy bits from cheese. Grate firm cheeses and roughly cube anything else.
Put everything but the wine in a food processor and buzz to just combine. Add the wine a little at a time until the spread reaches the desired consistency.
Serve at room temp. With veggies and crackers or spread on toasted baguette and broil.
