This pie is rich, but really good. I usually make it for Fourth of July -- very cool and refreshing when it's hot outside!
Crush cookies with a rolling pin or in a food processor. Mix crumbs with butter and press into the bottom and sides of a 9" pie pan.
Mix cream cheese, peanut butter, sugar and vanilla with a mixer on medium until well blended. Gently stir in 1 1/2 cups of Cool Whip. Freeze for 4 hours or overnight until firm.
Let stand 1/2 hour or until pie can easily be cut. Garnish with remaining Cool Whip, if desired.
