This is a great summer treat using fresh fruit when it is abundant, frozen fruit works good also. Very little ingredients but so good.
In a blender container combine fruit, orange juice, sugar, and if desired liqueur. Cover; blend till smooth. Press through a sieve to remove skin and seeds. Add additional orange juice to make 3 cups mixture. Transfer to a loaf pan. Cover; freez 4 hours or till firm. Break frozen mixture into small chunks. Transfer to chilled bowl. Beat with an electric mixer till smooth but not melted. Return mixture to loaf pan. Coverl freeze until firm. To serve, scrape across top with a spoon and mound into dessert dishes. Makes 3 cups.
strawberries, raspberrries, peaches or nectarines can be used for the fruit.
