Grease a cookie sheet or pizza pan (must have sides to form crust).
Slice cold cookie dough and lay on pan. Press into pan (using a plastic glove or plastic bag sprayed with cooking spray) to flatten and form the crust. (Works best when the dough is fresh from the fridge. You will probably only use about 1 1/2 packages for a regular size cookie sheet).
Bake at 350 for about 8-10 minutes, or until the crust is golden brown. It's okay if you overcook it SLIGHTLY - the cream cheese spread will soften it. Cool completely.
Mix the cream cheese, sugar and vanilla with an electric mixer until smooth and spreadable.
Spread onto the cooled crust. Top with sliced fruit, such as strawberries, blueberries, grapes, kiwi, peaches, etc. Get creative and recreate an American flag with strawberries and blueberries for Memorial or July 4th!!
