Beat cream cheese at medium speed of an electric mixer until smooth; add orange rind, orange juice, and ground ginger, mixing well. Spoon mixture into a decorating bag fitted with tip No. 18, and pipe mixture onto crackers; set aside. Cut fruit into various shapes, and decorate crackers as desired with fruit and mint leaves.
