Individual fruitcakes for Christmas gifts - Makes 6
Cream the butter and sugar. Add eggs, mix, add spices, vanilla. and liquids. In a separate dish combine flour, soda, salt and add to the liquid mix. Next add 1/2 the brandy and molasses. Stir until well mixed. Add the remainder of dry ingredients and liquid and stir again until well mixed.
In a very large bowl combine all of the fruit with the mix prepared earlier insuring that all of the fruit is completely mixed throughout the cake
Place mixed ingredients in 7 disposable aluminum baking pans lined with waxed paper that has been brushed with butter.
Place pans in a shallow pyrex dish that has 1 inch of water, place in oven and bake at 325 degrees for 2 1/2 hours.
Remove and let cool. remove cake from pan, spray with Brandy, wrap in cheesecloth and replace in the aluminum baking pan to develop "character".
After one week, spray brandy on the top a second time. "Enhances character"
