Perfect for breakfast or even a quick snack!
First, cook the quinoa. Add the rinsed quinoa, water, and milk to a saucepan and bring to a boil on high heat. Once it's boiled, reduce heat to low, cover, and let simmer for 10-15 minutes. Then remove from the heat and let it stand covered for another 5 minutes, or until all the liquid is absorbed. Then add in the cinnamon and stir. You can chose to leave your quinoa hot or make it cold (personally I like it cold). To chill it quickly, just pop it in the freezer for a few minutes. Make sure you constantly check it to make sure it's evenly cold and some parts aren't still hot and that it's not freezing and sticking together. If you want your quinoa hot, you can skip that step.
While your quinoa is chilling or cooling off, cut up your banana, apples, and mint. These are my personal favorite things to put in breakfast quinoa, but you could also use grapes, oranges, melon, etc. After everything is cut and your quinoa is chilled/cooled, simply toss in all the ingredients and mix. Then top with the buckwheat honey (or any other kind of honey you like) and the chia seeds, and garnish with more mint, fruit, cinnamon, nuts, or even coconut shreds if you want. Then you're done! Enjoy!
