-Spray an 8x8 dish with pam
-Melt cheese and butter, stirring constantly until smooth. Remove from heat and add vanilla.
-In a large bowl, sift the powdered sugar and cocoa together.
-Pour cheese mixture into the cocoa sugar, stirring until mixed. When it starts to get thick, it is easier to actually use your hands.
-Press into the bottom of the 8x8 pan. When all is done, you will need to take a paper towel and blot the excess butter off the top of the fudge til it is dry. Fridge till firm.
*** Peanut Butter*** -instead of the cocoa, add 1 cup of creamy peanut butter to the combined velvetta/butter mixture over heat, then continue as above.
