Heat oven to 350 degrees F.
Combine 1 cup sugar, cocoa, hot water and 1 teaspoon vanilla extract in a small bowl. Set aside.
In another mixing bowl, cream together 2 cups sugar, eggs and oil, then add remaining ingredients.
Pour creamed mixture into two (9-inch) pie crusts and then pour chocolate mixture on top.
Bake for approximately 45 minutes. Test with a wooden pick for doneness. (Note - many times I end up baking an additional 15-20 minutes, not sure if it's my oven, or if I just prefer it more "done", but this way it's great with coffee in the morning)
