Suggest a better description1. Cook the sausages according to package directions. Drain them on paper towels.
2. Heat the oil in a large skillet, add the onion and garlic and cook over a low heat, stirring frequently, for 7 minutes or until soft. Add the yellow pepper, paprika, italian seasoning, and chili sauce to taste. Cook gently for 7 minutes, stirring occasionally.
3. Add the canned tomatoes, breaking them up with a wooden spoon (or crushing them by hand before adding), then add salt and pepper to taste and stir well. Cook over medium heat for 12 minutes, adding the vegetable stock gradually as the sauce reduces.
4. While the tomato sauce is cooking, cut the sausages diagonally into 1/2" pieces.
5. Add the sausage pieces to the sauce, reduce the heat to low, and cook for 10 minutes. Meanwhile, cook the pasta according to the instructions on the package.
6. Taste the sauce for seasoning and adjust if needed. Drain the pasta and add it to the sauce. Top with cheese and serve.
