A recipe we have made by combining our favorite things about other recipes.
Add the Olive oil to a large pot over medium-high heat. Once hot, add the onions, peppers & jalapeno and saute until until soft, about 4 minutes.
Add the garlic and saute until just fragrant. Stir in the beef and sausage, breaking it up with the back of a wooden spoon, and cook until browned, about 6 minutes.
Drain the beef mixture through a colander. Add it back to the pot with 1/2 Tablespoon bacon grease and stir in the chili powder, cumin and oregano. Cook for about 2 minutes. Stir the tomato paste into the beef mixture; this will "toast" it and give the chili more flavor. Bring to a simmer, and then add the diced tomatoes, beans and corn. Mix 1/4 cup masa flour and the 1/2 cup water until smooth. Set aside. Simmer chili on medium-low for 1 hour, stirring on occasion to keep the bottom from sticking. After an hour, mix in the Masa; This gives it a delightful corn flavor. Salt to taste...Continue to simmer for 1 additional hour stirring occasionally.
Top with shredded cheese, sour cream, sliced olives and chopped green onions before serving.
