Ganache:
Combine first 5 ingredients in a blender or food processor. Blend until smooth. While the blender is running, add the coconut oil until emulsified.
Coconut Cream:
Chill a medium bowl. Open the refrigerated can of coconut milk and discard and liquid.
Place the thick coconut milk in the chilled bowl. Beat until fluffy.
Parfait:
Spoon the chocolate ganache into a tall glass. Cover with the oats, then berries. Top with coconut cream and shredded coconut. Garnish with cacao nibs and a few blueberries.
