Sort the garbanzo beans to check for discolored ones and stones. Soak in a large bowl of water for 8 hours. Drain and then put them in a pressure cooker with 6 cups of water and a tablespoon of olive oil. Pressure cook 20 minutes, then do a natural pressure release. Dice the bacon and veggies. Cook in the bottom of a stockpot, bacon first, then with onions & garlic, then with carrots and celery. Add beans, stock, and seasonings and simmer 45 minutes.
